Standard 1: Integrated Curriculum / Projects

Hunger Games Culinary Competition

Students in Culinary 2 and who also have Ms. Gion for first period English Honors had a Hunger Games competition in Culinary class. The students had just finished reading the Hunger Games and the class was given "apocalyptic" ingredients and competed by making a dish. Their dish was rated on presentation, taste, creativity, and sustainability. Several teachers and administrative staff were the judges for the competition. The winning dish was black bean brownies with a blueberry frosting.

Curriculum In Action:
CIA Visit on May 21, 2015 was done by Debra Dumas.
The students were making molten cupcakes which is similar, but different from a molten cake. Not only have the students learned how to make the cake, but they learned something far more important how to improvise and apply what you know in a different format. What a wonderful transferable skill to have at such a tender age.

While I was doing the CIA Visit, I got to observe the students preparing pinwheel sandwiches for an evening function. The sandwiches had unique colors as you can see from the photos.

There was a lot going on in Culinary Design today. Molten cupcakes were being created while pinwheel sandwiches were prepared and guess what? Today, is the last day for the teacher lunches and they were getting a real treat, Chipotle like meal with a choice of steak or chicken! Oh, my, when is lunch? That is exactly what my stomach kept telling me as I took in the aromas of the meals as the scents sashay across the room.

Standard 3: Program of Study
Upon going to the Seabreeze High School's website, the only program of study available was 2015-2016 on May 21, 2015. A search using Google did not yield any program of study for 2015-2016.

Once a current 8th grader submitted a District Application to Seabreeze for the Culinary Academy, they were sent a Culinary specific application to complete as well. This included more detailed recommendation letters and a longer essay.

Ms. Debra Dumas has been talking to and working with the feeder middle schools and school counselors throughout the school year. Debra has been talking to parents at Parent Nights at the local high schools.

The High School Showcase gave CA the opportunity to articulate as well.

Standard 11: Capstone Project

11/24/15: Gobble-to-Go holiday pie Fundraiser. For each pie that was purchased, the Academy donated one pie to a family in need.


August-May: Catered boxed lunches for teachers. The Academy as a whole voted on and selected a boxed lunch for teachers. Lunches included a side, main entree, and dessert. Lunches were delivered by 4th period students to teachers in their classrooms.


5/22/15: Food Truck Rally project for Culinary 1. Students worked in groups coming up with their own food truck company and made food, a website, a replica of their truck, and a menu to present to the class.

4/30/15: Cupcake Bar at the end of the year Culinary banquet. The Junior class was in charge of making and presenting a Cupcake Bar for dessert for the Culinary banquet. There were 5 flavors of cupcakes to choose from and 9 flavors of frosting - along with many toppings!

Standard 12: Marketing


Competition Team try-outs were attended by the Ormond Observer and a story was done on the event and students:
  • The academy has its own banner and table cloth with the academy's name that is taken to different competitions and used for different events throughout the school year.
  • Ms. Dumas has been marketing to the feeder middle schools about CA.
  • The High School Showcase was the launch pad for Seabreeze High School's Culinary Design marketing.
  • Teacher box lunches is not only a marketing opportunity, but it gives teachers and staff the first hand experience of the culinary delights served up by CA. There is nothing like word of mouth as a form of advertisement.
  • Parent Nights at the local middle schools gave Ms. Dumas the opportunity to market the academy.
  • The culinary chef outfits are an additional way to market the academy as seen in the photo above under area 10.
  • Providing desserts for the veteran's home was another way that we were able to advertise.
  • The students have two sets of shirts to wear for special events, one is a t-shirt and the other is a red polo.
  • Another form of advertisement is the yearbook photo for clubs.
